Whisk together chia seeds, coconut milk, maple syrup, and vanilla extract until fully combined. Let sit for 5 minutes, whisk again to prevent clumping.
Transfer to jars or bowls, cover and refrigerate for at least 4 hours, or overnight for best texture.
Blend half the mango with lime juice until smooth. Dice the remaining mango into small cubes.
Layer chia pudding with mango purée, fresh mango cubes, toasted coconut flakes, and lime zest. Garnish with fresh mint.
